The easiest, quickest mini apple cookies for some weekend baking

Just 10 ingredients, single serve, super easy to make and most importantly they only take 10 minutes to bake in the oven, so no long wait before you eat them!

I opted to have these with a coffee as a mid afternoon snack but they’re so versatile and could be paired with some yoghurt and fruit for a healthy breakfast or be served with ice cream for pudding, I could go on!!!
All you need: makes 12 cookies
- 100g plain flour
- 50g Simplyseedz plain oats
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/2 tsp bicarbonate of soda
- 25g unsalted butter
- 80g brown granulated sugar
- 1 egg
- 1 medium-large apple
- 1 tsp vanilla extract
- Optional add ins: raisins, blueberries, nuts, dark chocolate, nut butter, dried berries.
Put all ingredients in a bowl and mix well until all binds together.
Line a baking tray with baking paper and put table spoonfuls of mixture on to the tray.
Pop them in an oven that’s at 180c for about 10 minutes & enjoy!
